Lemon Parm Pasta with Chicken

I saw this recipe on the My Happy Meals blog, and knew I had to give it a try.  Molly has yet to let me down with the dishes I've tried on her blog, so when I saw this dish it seemed to simple that I went for it!  Honestly, the one thing that I was hesitant about was the fact that it is a pasta dish without any creamy sauces.  I didn't think it would have much favor, but again it was just so fast and simple that I gave it a try and I'm so glad that I did.

I made half with chicken and the other half with spinach.  Darnell LOVED it, and I also made it for my mom one time she came into town.  She said it was delicious!  Now, it is a dish that stays in the rotation.

I've also tried this dish with shrimp instead of chicken to change it up.  Again, it was well received!

Ingredients

* 1/2 lb. angel hair pasta

* 1 lb. boneless skinless chicken breast, chopped into bite sized pieces

* 2-3 cloves garlic, minced

* 2 tbsp butter

* 3 tbsp lemon juice

* 1/4 cup shredded parmesan cheese, or add more to taste

* 1 cup reserved pasta water



Directions



1. Bring large pot of water to a boil.

2. Meanwhile, heat butter in large skillet. Saute chicken and garlic until cooked through.

3. Cook pasta according to package directions.

4. Add lemon juice and Parmesan to chicken shortly before pasta is done.

5. Toss the cooked pasta with the chicken mixture.

6. Ladle in 1 cup of pasta water to extend the sauce.

Super simple, super fast, super yummy!
